Arugula, Mint and Grilled Potato Salad

Ingredients

  • 1 1/2 lbs (750g) baby potatoes, thinly sliced
  • olive oil
  • salt and freshly ground pepper
  • 1 cup lightly packed mint leaves (left whole)
  • 3 handfuls of arugula
  • 1 small red onion, thinly sliced
  • Honey And Smoked Cheese Dressing

  • 1/2 cup mayonnaise
  • 1/2 cup grated smoked applewood cheddar
  • 3 tablespoons red wine vinegar
  • 2 tablespoons honey
  • 1 garlic clove, minced
  • salt and freshly ground pepper

Directions

To make the honey and smoked cheese dressing, combine all ingredients in a large bowl and whisk until well combined.

Heat a barbecue or grill pan over medium heat. Toss potato slices with oil and salt and pepper in a large bowl. Cook for about 5 minutes per side until tender and grill marks appear. Toss potato slices with mint, arugula, onion and dressing.

Serves 6.
