Baked Apricots with Ricotta and Maple

    Directions

    Grease a large, shallow baking dish. Preheat the oven to 400F (200C). Place the apricots, cut side up, in the prepared dish. Brush the cut side of the apricots with the melted butter.

    Spoon the ricotta cheese onto each apricot half and drizzle with maple syrup. Sprinkle with the almonds. Bake, uncovered, in the preheated oven for about 20 minutes or until the almonds are turning golden brown. Serve warm.

    Serves 4.
