Basil Pesto

  • 2 cups fresh basil leaves
  • 1/2 cup pine nuts, toasted
  • 1/2 cup finely grated fresh parmesan cheese
  • 2 garlic cloves, coarsely chopped
  • salt and freshly ground pepper
  • 1/3 cup olive oil


Traditionally, pesto is made with a mortar and pestle but many people now use the convenience of a food processor. You can buy good quality bottled pesto but try making your own when the basil is in season and plentiful. Try experimenting with other herbs such as mint and cilantro or arugula.

Put basil, pine nuts, Parmesan cheese, garlic and a pinch of salt and pepper into a food processor bowl; process until combined. Add the oil in a slow steady stream until well combined.

Makes about 1 1/2 cups.
