Berry Lime Popsicles

    Stir juice, water and sugar in a small saucepan over medium heat until sugar is dissolved. Boil gently, uncovered, for 5 minutes or until thickened slightly.

    Stir in the berries and cook for about 5 minutes or until wilted (or thawed if using frozen berries). Put berry mixture and tequila in a blender and blend until smooth. Press mixture through a fine metal sieve into a medium bowl; discard seeds.

    Place moulds on a baking sheet. Divide berry mixture evenly into moulds. Freeze for 1 hour. Place a popsicle stick in the centre of each mould. Freeze for 8 hours or overnight until set.

    To serve, peel away paper moulds. If you are using plastic moulds, set them in warm water for about 1 minute to make them easy to remove. Serve immediately.
