Bircher Muesli

Ingredients

  • 2 cups rolled oats (old fashioned)
  • 3 cups plain yogurt
  • 1 cup apple juice
  • 2 tablespoons lemon juice
  • 2 medium apples, grated
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 cup honey
  • 2/3 cup dark raisins
  • 2/3 cup chopped dried apricots (or peaches), chopped
  • salt
  • 2 cups fresh berries
  • 2/3 cup toasted natural almonds, coarsely chopped


Directions

This is best made the night before serving.

Combine oats, yogurt, juice, apples, spices, honey, raisins, apricots and a pinch of salt in a large bowl. Cover and refrigerate for 8 hours or overnight.

Just before serving fold in berries and almonds.

Serves 6 to 8.
