Carrot, Radish and Cashew Salad with Curry Dressing

Ingredients

  • 3 medium carrots, peeled and trimmed
  • 10 medium radish, trimmed
  • 1 bunch green onions, thinly sliced
  • 2/3 cup cashews, toasted
  • pinch of salt and freshly ground black pepper
  • Curry Dressing

  • 1/3 cup peanut oil
  • 2 tablespoons white wine vinegar
  • 2 tablespoons chopped fresh mint
  • 1 teaspoon curry powder
  • 1 garlic clove, minced
  • salt and freshly ground pepper


Directions

To make the curry dressing, place all ingredients in a jar and shake until combined.

Coarsely grate carrots and radish. Place in medium bowl. Add dressing and green onions; toss to combine. Sprinkle with cashews.

Serves 4.
