Cooking Brown Rice

Ingredients

  • 1 tablespoon peanut oil, plus 1 tablespoon extra
  • 4 large eggs, lightly beaten
  • 1medium white onion, finely chopped
  • 4 garlic cloves, minced
  • 1 1/2 tablespoons finely chopped ginger
  • 3 cups sliced shiitake or brown mushrooms
  • 2 tablespoons dry sherry
  • 4 cups cooked rice
  • 1 bunch green onions, thinly sliced
  • 2 teaspoons granulated sugar
  • 3 tablespoons soy sauce
  • 1/2 teaspoon sesame oil
  • pinch of salt and cracked black pepper

Directions

Bring the water to a boil in a medium (2 quart/2 litre) saucepan with a heavy base.

Stir in the rice and a pinch of salt. Reduce the heat to low. Cover tightly with lid and cook for 60 minutes. Remove from the heat and fluff the rice with a fork. Serve hot.

Makes about 4 to 5 cups.
