Curried Lentil and Carrot Burgers

Ingredients

  • 1 tablespoon canola oil, plus 2 tablespoons extra
  • 1 cup chopped red onion
  • 1 1/2 cups grated carrot
  • 4 garlic cloves, minced or chopped
  • 1 tablespoon finely chopped
  • 2 to 3 tablespoons curry paste
  • 19 oz (540ml) can lentils, rinsed and drained (or 2 cups cooked and drained)
  • 2 cups stale breadcrumbs
  • 1 large egg
  • 1/2 teaspoon salt
  • 6 burger buns, split and toasted
  • 1/2 cup thinly sliced red onion
  • 1 cup thinly sliced cucumber
  • Cilantro Sauce

  • 1/2 cup sour cream
  • 3 tablespoons chopped fresh cilantro
  • 3 tablespoons sweet chili sauce
  • pinch of salt and pepper


Directions

Heat 1 tablespoon of oil in medium frying pan. Add chopped onion, carrot, garlic and ginger and cook for about 5 minutes or until onions are softened. Add curry paste and cook for about 1 minute or until fragrant. Place in food processor. Add lentils, breadcrumbs, egg and salt. Process until well combined. Spoon into medium bowl. Chill for at least 30 minutes. Shape into 6 patties. Heat remaining oil in large frying pan over medium-high. Cook patties for 3 to 4 minutes per side until golden brown.

Spread cilantro sauce onto cut side of each bun. Top one bun half with patty, sliced onion and cucumber. Top with remaining bun halves. Repeat with remaining patties, buns, sauce, onions and cucumber.

To make the cilantro sauce, combine all ingredients in a small bowl.

Serves 6.
