Date, Apple and Walnut Strudel

  • 3 medium green apples, peeled and sliced (about 3 cups)
  • 1/2 cup chopped dates
  • 1/2 cup walnuts, toasted and finely chopped
  • 1/2 cup fine dry breadcrumbs
  • 2 tablespoons honey
  • 1 teaspoon ground ginger
  • 1/4 teaspoon ground cinnamon
  • 8 sheets phyllo pastry, thawed
  • 2 tablespoons melted butter
  • 1 tablespoon milk


The crisp tartness of Granny Smith or golden delicious apples are perfect for a strudel.

Grease a large baking sheet. Preheat the oven to 350°F (180°C).

Combine the apples, dates, walnuts, breadcrumbs, honey and spices in a large bowl.

Place a sheet of phyllo pastry on a smooth surface, with one short end closest to you. (Cover the remaining pastry with a damp tea towel to prevent it from drying out.) Brush the pastry with a little melted butter. Layer it with another sheet of pastry and brush with a little milk. Repeat with the remaining pastry, alternating between brushing with butter and milk.

Arrange the apple mixture across the short end of the pastry closest to you. Leaving the ends open, roll up firmly to enclose the filling. (Just poke back in any filling that comes out the ends as you roll it up.) Place on the prepared baking sheet. Brush with the remaining butter mixture.
