Date, Pear and Pecan Loaf

  • 1 cup water
  • 1 cup pitted dates
  • 1 teaspoon baking soda
  • 1/4 cup softened butter
  • 2/3 cup packed brown sugar
  • 2 eggs
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon ground nutmeg
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground clove
  • 1 cup coarsely chopped pecans
  • 1 large pear, peeled, cored and chopped


Grease a 9 x 5 x 3 inch (23 x 13 x 8cm) loaf pan and line the base and long sides with parchment paper. Preheat the oven to 350°F (180°C).

Combine the water and dates in a medium saucepan. Bring the mixture to a boil, uncovered, over high heat. Immediately remove it from the heat and stir in the baking soda (the mixture will froth). Cool for 10 minutes.

Using an electric mixer, beat butter, sugar, eggs, flour, baking powder, spices and date mixture in a large bowl until combined. Stir in the remaining ingredients.

Pour mixture into prepared pan. Bake in the preheated oven for about 40 minutes or until a skewer inserted into the centre of the loaf comes out clean. Let stand in pan for 10 minutes before turning the loaf out onto a wire rack to cool. Cool completely before storing. Serve warm or at room temperature.
