Fish in Beer Batter

  • 1 cup all-purpose flour
  • pinch of salt
  • 1 tablespoon olive oil
  • 1 cup beer
  • 1 large egg white
  • 4 pieces of boneless, skinless fish (such as pickerel, white fish, snapper or halibut), halved
  • vegetable oil for deep frying
  • mayonnaise, lemon wedges and flaked sea salt to serve, optional


Combine flour, salt olive oil and beer in a medium bowl. Whisk to remove any lumps. Let stand for 1 hour.

Beat egg white in medium, clean bowl until soft peaks form. Fold into batter. Dip fish into batter one piece at a time and carefully place in hot oil (350°F – 375°F). Cook for about 3 minutes per side or until golden and cooked through. Drain on paper towel. Serve with mayonnaise, lemon wedges and salt if desired. Serves 4.
