Scrambled Eggs with Dill Butter Asparagus

Ingredients

  • 1 teaspoons butter
  • 8 large eggs
  • 1 tablespoon water
  • pinch of salt and freshly ground pepper
  • 1/4 cup grated smoked gouda

  • DILL BUTTER ASPARAGUS
  • 1 tablespoon butter
  • 1 bunch asparagus, trimmed (and halved lengthways if thick)
  • 1 teaspoon chopped fresh dill
  • 1 tablespoon lemon juice
  • pinch of salt and freshly ground pepper


Directions

To make the dill butter asparagus, heat butter in large frying pan over medium heat. Add asparagus and cook, stirring occasionally for 3 to 5 minutes or until just tender. Stir in remaining ingredients.

To serve, spoon asparagus onto 4 serving plates, top with eggs. Serves 4.
