Ginger Glazed Salmon with Broccoli Apple Slaw

Ingredients

  • 1 tablespoon finely grated ginger
  • 3 tablespoons honey
  • 2 tablespoons soy sauce
  • 2 garlic cloves, minced
  • 4 skinless, boneless salmon fillets (about 1 lb/500g)
  • olive oil
  • Broccoli Apple Slaw

  • 1/4 cup olive oil
  • 3 tablespoons cider vinegar
  • 2 tablespoons honey
  • 2 tablespoons soy sauce
  • 6 oz (185g) broccoli stems, coarsely grated
  • 1 apple, cored and thinly sliced
  • 2 cups finely shredded red cabbage
  • 1 bunch green onions, thinly sliced
  • 1/3 cup sunflower seed kernels, toasted


Directions

Combine ginger, honey, soy sauce and garlic in a small bowl. Brush salmon with a little oil. and some soy mixture. Cook salmon in a hot pan over medium-high heat bushing with soy mixture. Cook for about 3 minutes per side depending on thickness of salmon.

To make the broccoli apple slaw, place oil, vinegar, honey and soy in a jar. Shake until well combined.

Toss remaining ingredients together in large bowl. Drizzle with dressing; toss to combine. Serve with salmon.
