Ginger Pork

  • 3 tablespoons soy sauce
  • 3 tablespoons dry sherry
  • 1 tablespoon granulated sugar
  • 2 teaspoons cornstarch
  • 1/2 teaspoon cracked black pepper
  • 1/2 teaspoon salt
  • 1 lb (500g ) pork tenderloin, cut into strips
  • 1 tablespoon peanut oil
  • 2 tablespoons finely chopped ginger
  • 1 large shallot, finely chopped
  • 2 garlic cloves, minced
  • 1 teaspoon crushed dried chili
  • 1 teaspoon sesame oil
  • 2 tablespoons rice vinegar
  • 1 bunch baby Shanghai bok choy, (o other asian greens) trimmed and coarsely chopped


Combine the soy sauce, sherry, sugar, cornstarch, pepper and salt in a medium bowl. Add the pork and toss to coat. If possible, marinate for about 30 minutes if time permits.

Heat a wok over medium-high heat and add peanut oil, ginger, shallot, garlic and chili; stir-fry for about 1 minute or until fragrant.

Increase the heat to high and add pork with the marinade. Stir-fry for about 5 minutes or until pork is tender.

Add sesame oil, vinegar and bok choy. Stir-fry for about 3 minutes or until the sauce is thickened and bok choy is tender.

Serves 4.
