Grilled Onion, Fennel and Orange Salad with Shallot Vinaigrette

Ingredients

  • 2 red onions, peeled and sliced into rings
  • 2 fennel bulbs, trimmed and sliced
  • 3 large oranges, peeled and segmented
  • 1/2 cup flaked almonds, toasted
  • Shallot Vinaigrette

  • 3 tablespoons olive oil
  • 2 tablespoons finely chopped shallots
  • 2 tablespoons red wine vinegar
  • 2 tablespoons jalapeno jelly
  • salt and freshly ground pepper
  • 1 garlic clove, minced


Directions

To make the vinaigrette, combine all ingredients in a jar and shake until well combined.

Preheat greased barbecue or grill pan to medium heat. Cook onion and fennel for about 5 minutes each side until tender and grill marks appear.

Toss onion, fennel, oranges and vinaigrette in a large bowl. Sprinkle with almonds.

Serves 4 to 6.
