Honey Anise Chicken

  • 2 tablespoons peanut oil
  • 1/4 cup julienne ginger
  • 4 garlic cloves, minced
  • 3 lb (1.5kg) skinless chicken thighs, halved
  • 1 teaspoon cracked black pepper
  • 1/3 cup dry sherry
  • 1 tablespoon honey
  • 1/4 cup light soy sauce (or salt reduced)
  • 1 star anise
  • 2 teaspoons cornstarch
  • 1 tablespoon water


Heat wok over low heat. Add oil, ginger and garlic. Stir-fry for 1 minute or until fragrant. Add chicken, increase heat to medium, cook until chicken changes colour. Add pepper, sherry, honey, soy and star anise. Bring to boil. Reduce heat to low. Cook, covered, for about 25 minutes or until chicken is cooked. Remove star anise. Combine cornstarch and water in small bowl. Add to chicken. Stir until thickened.

Serves 4 to 6.
