John’s Sweet Curried Sausages

  • 2 teaspoons canola oil
  • 6 good-quality thick beef sausages
  • 3/4 cup thinly sliced onion (about 1 large onion)
  • 2 garlic cloves, minced
  • 1 teaspoon finely grated ginger
  • 1 1/2 tablespoons curry powder
  • 1 1/2 to 2 cups beef broth
  • 1/2 cup dark raisins
  • 2 medium apples, peeled, cored and thinly sliced
  • salt and freshly ground pepper
  • 1 medium banana, sliced


Heat oil in a large frying pan over medium-high heat. Add sausages and cook, for 5 minutes or until browned; remove from pan. Cut sausages into pieces; set aside.

Add onion to same pan and cook, stirring occasionally, for about 5 minutes or until softened and lightly browned. Add garlic, ginger and curry powder and cook, stirring, for about 1 minute or until fragrant.

Stir in broth and bring to a boil. Reduce heat to medium. Add the raisins, apples, sausages and a pinch of salt and pepper. Cook, uncovered, stirring occasionally, for about 10 minutes or until the sauce is thickened and the apples are tender.

Gently stir in banana and cook for about 2 minutes or until hot. Leftovers will keep up to 3 to 4 days covered in refrigerator. Not suitable to freeze.
