Little Sour Cream and Apple Cakes

  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla
  • 2 eggs
  • 1 1/3 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon ground nutmeg
  • 1 cup light sour cream
  • 1/3 cup ground almonds
  • 2 to 3 small red apples, with peel, thinly sliced
  • icing sugar for dusting


Grease 8 muffin holes of a muffin pan. Preheat the oven to 350?F (180?C). Beat butter, sugar and vanilla in a bowl of an electric mixer until light and creamy. Add the eggs, one at a time, beating well after each addition.

Fold in flour, baking powder and nutmeg with sour cream and almonds. Spoon into prepared muffin pan. Bake in preheated oven for 20 to 25 minutes or until cooked when tested with a skewer. S

erve cakes warm.
