  • 3 egg yolks
  • 1 1/2 tablespoons lemon juice
  • 1 1/2 tablespoons white wine vinegar
  • 1/2 teaspoon sugar
  • pinch of salt
  • 1 1/2 cups canola oil or light olive oil


The mayonnaise can be flavored with herbs, horseradish, sweet chili sauce, spices, honey, wasabi…the list is endless.

Put yolks, juice, vinegar, sugar and salt in a blender and blend until smooth.

With blender running, add the oil in a slow, steady stream down the feed shoot until the mixture is thick and pale. This step should take about 5 minutes. Spoon into jars. Keep refrigerated. Will keep for 2 weeks.

Makes about 1 2/3 cups.
