Mussels in Wine, Basil and Chili

Ingredients

  • 1 tablespoon butter
  • 2/3 cup finely chopped onion
  • 4 cloves garlic, minced
  • 1 cup dry white wine
  • 1 teaspoon sambal oelek (chili paste)
  • 1/2 cup whipping cream
  • 3 tablespoons chopped fresh basil
  • 3 lbs (1.5kg) mussels, cleaned if necessary
  • salt and freshly ground pepper


Directions

Melt butter in a medium frying pan over medium heat. Add onion and garlic and cook for about 10 minutes or until soft.

Stir in sambal oelek and wine and boil gently, uncovered, for about 3 minutes or until mixture has reduced almost by half.

Stir in cream and boil gently, uncovered, for 2 to 3 minutes or until mixture has thickened slightly. Add basil, mussels, salt and pepper. Cook, covered, for about 3 minutes or until tender and shells are opened; do not over cook. Discard any unopened shells. Serves 4.
