Roasted Olives and Sticky Spiced Almonds

Ingredients

    ROASTED OLIVES
  • 2 cups of olives of your choice (I recommend you don’t use stuffed)
  • 1 garlic bulb, halved
  • 4 sprigs of thyme
  • 4 sprigs of rosemary
  • peel of 1 lemon
  • peel of 1 orange
  • 1/2 teaspoon freshly ground pepper
  • 2 teaspoons olive oil

  • STICKY SPICED ALMONDS
  • 2 cups whole natural almonds
  • 2 tablespoons honey
  • 2 tablespoons soy sauce
  • 1 teaspoon crushed dried chilies
  • 1/4 teaspoon Chinese 5 spice powder
  • 1 teaspoon flaked sea salt and freshly ground pepper


Directions

Grease and line 2 baking sheets with parchment paper. Preheat oven to 375°F (180°C).

To make the roasted olives, combine all ingredients on one prepared baking sheet. Roast in preheated oven for about 15 minutes, stirring occasionally, or until fragrant. Remove and discard garlic, herbs and peel if desired.

To make the sticky spiced almonds, combine all ingredients in medium bowl. Spread on remaining prepared baking sheet. Roast in preheated oven for about 15 minutes, stirring occasionally, until sticky and golden.

Serve separately in bowls. Makes about 2 cups of each.
