Sausage and Olive Pasta

  • 12 oz (375g) pasta of your choice
  • 1 tablespoon olive oil, plus 1 tablespoon, extra
  • 4 hot (or mild) Italian sausages
  • 6 garlic cloves, minced
  • 8 small vine-ripened tomatoes, coarsely chopped
  • 1/3 cup chopped flat leaf (Italian) parsley
  • 1/4 cup chopped basil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon olive oil
  • salt and freshly ground pepper
  • 1 cup pitted, dried black olives
  • freshly grated parmesan cheese to serve


Cook pasta in a large pot of boiling, salted water for 12 to 15 minutes until al dente.

Meanwhile, heat 1 tablespoon of oil in a large frying pan over medium-high heat. Squeeze filling from sausages into pan. Cook, for about 5 minutes, breaking up sausage, or until browned and cooked. Add garlic and cook, stirring, for about 3 minutes or until softened.

Add tomatoes and cook until tomatoes are softened. Stir in parsley, basil, juice, oil and a pinch of salt and pepper. Cook for 3 to 5 minutes or until tomatoes are softened.

Add olives and cook until hot. Add pasta and toss to combine. Sprinkle with parmesan to serve. Serves 4 to 6.
