Pan Fried Fish with Citrus Almond Butter

  • 1 1/2 lbs (750g) firm white fish fillets (such as snapper or halibut)
  • all-purpose flour
  • 2 eggs, lightly beaten
  • 2 cups finely grated fresh Parmesan cheese
  • 1 tablespoon olive oil
  • Citrus Almond Butter

  • 2 teaspoons butter
  • 2 teaspoons olive oil
  • 1/4 cup sliced almonds
  • 3 tablespoons orange juice
  • 1 tablespoon lemon juice
  • 1/2 teaspoon finely grated orange zest
  • 2 tablespoons chopped fresh chives
  • salt and freshly ground pepper


To make the citrus almond butter, heat butter and oil in a small frying pan over medium heat until the butter is melted. Add the almonds and cook, stirring, for about 3 minutes or until they are golden. Add remaining ingredients and stir until hot.

Coat fish in flour, dip in egg and then sprinkle with the Parmesan cheese.

Heat a large frying pan, preferably non-stick, over medium heat. Cook fish in batches for 2 to 3 minutes each side or until golden and just cooked; do not overcook.

Drizzle the sauce over the fish and serve immediately. Serve hot.
