Pear and Chicken Stir-Fry

  • 1/4 cup chicken broth
  • 2 tablespoons soy sauce
  • 2 teaspoons cornstarch
  • 1 1/2 teaspoons sambal oelek (chili paste)
  • 1/2 teaspoon cracked black pepper
  • 1 tablespoon canola (or peanut) oil
  • 1 lb (500g) boneless, skinless turkey thighs or breast, thinly sliced
  • 4 garlic cloves, minced
  • 2 medium, firm ripe pears, peeled, cored and sliced
  • 1 bunch green onions, cut into 1 inch (2.5cm) pieces
  • 2 tablespoons chopped fresh cilantro


Combine broth, soy sauce, cornstarch, sambal oelek and pepper in a small bowl or a cup measure; set aside.

Heat a large wok or frying pan over high heat. Add oil, turkey and garlic and stir-fry for 5 to 7 minutes or until turkey is browned and tender.

Add soy sauce mixture, pears, green onions and cilantro. Sir-fry for about 3 minutes or until pears are hot and softened.

Serves 4.
