Red Pepper, Garlic and Fresh Mozzarella Pizza

  • Roasted Pepper Sauce

  • 2 roasted peppers
  • 2 garlic cloves
  • 1 teaspoon sambal oelek
  • 1/2 cup finely grated fresh parmesan cheese
  • salt and cracked black pepper
  • 1 teaspoon balsamic vinegar
  • Pizza

  • 2 x 12 inch (30cm) pre-cooked pizza base, (about 600g)
  • 1 cup thinly sliced roasted peppers
  • 4 garlic cloves, minced
  • 1 cup finely grated freshly parmesan cheese
  • 1/2 lb (250g) fresh mozzarella, torn or sliced
  • 200g thinly sliced prosciutto, torn
  • 2 cups arugula leaves
  • 1/4 cup basil leaves, shredded
  • olive oil for drizzling
  • fresh lemon juice for drizzling


To make the red pepper sauce, place all ingredients in a blender and blend until smooth.

To make the pizza, place 2 pizza pans or pizza stones into a cold oven. Preheat oven to 450°F (220°C).

Spread red pepper sauce over each pizza base leaving a 1/2 inch (1cm) border. Top with peppers, garlic and parmesan. Place on preheated pans or stones. Bake in preheated oven for 10 minutes. Top with mozzarella and cook a further 5 minutes or until base is golden brown and crisp. Sprinkle with prosciutto, arugula and basil. Drizzle with oil and juice.
