Salmon, Spinach and Caramelized Onion Spaghetti

Ingredients

  • 375g (12 oz) salmon fillet, skin removed
  • olive oil
  • salt and freshly ground pepper
  • 340g package brown rice pasta
  • 1 medium onion, thinly sliced
  • 1 leek, thinly sliced
  • 6 garlic cloves, minced
  • 2 teaspoons granulated sugar
  • 2 tablespoons lemon juice
  • 1 teaspoon sambal oelek (chili paste)
  • 3 handfuls of baby spinach leaves

Directions

Brush salmon with oil, sprinkle with salt and pepper. Heat a large frying pan over high heat. Cook salmon for about 3 minutes each side or until tender. Do not overcook. Flake salmon with a fork, cover and set aside.

Cook pasta for about 10 minutes or until al dente; do not overcook.

While the pasta cooks, heat a little oil in the same frying pan over medium-high heat. Add onion and leek and cook, stirring occasionally for about 10 minutes or until softened. Add sugar, juice, salt and pepper. Cook, stirring, for about 2 minutes or until sugar is dissolved.

Stir in salmon, sambal and spinach leaves. Add pasta and stir to combine.

Serves 4.
