Scallop and Shrimp Salad with Ginger Dressing

  • 1 tablespoon peanut oil
  • salt and freshly ground black pepper
  • 1 1/2 lbs (750g) scallops
  • 12 oz (600g) large shrimp, peeled and deveined with tails intact
  • 1 bunch green onions, sliced
  • 3/4 cup cilantro leaves, loosely packed
  • 2 or 3 small red chilies, thinly sliced
  • arugula or salad leaves to serve
  • 2 cups crunchy noodles
  • Ginger Dressing

  • 2 tablespoons finely grated ginger
  • 1/4 cup peanut oil
  • 2 garlic cloves, minced
  • 2 tablespoons rice vinegar
  • 2 tablespoons lime juice
  • 2 tablespoons soy sauce
  • 1 tablespoon granulated sugar
  • salt and freshly ground pepper


To make the ginger dressing, place all ingredients in a jar and shake until well combined.

Heat oil in a large frying pan over medium-high heat. Sprinkle scallops and shrimp with salt and pepper. Cook in batches for 3 to 4 minutes or until just cooked. Remove to a large bowl; let cool.

Add onions, cilantro, chilies (lettuce if desire) and dressing and toss to combine. Add noodles; serve immediately.

Serves 4 to 6.
