Shrimp and Pea Stir-Fry

Ingredients

  • 2 tablespoons dry sherry
  • 1 teaspoons granulated sugar
  • 1 lb (500g) medium raw shrimp, peeled and deveined
  • 2 teaspoons cornstarch
  • 1/2 cup chicken broth
  • 2 tablespoons oyster sauce
  • 1/2 teaspoon sesame oil
  • 1 tablespoon peanut oil
  • 1 teaspoon finely chopped ginger
  • 2 garlic cloves garlic, minced
  • 4 oz (125g) sugar snap peas, trimmed
  • 1/4 cup chopped garlic chives (if you cant find garlic chives just use regular chives, garlic chives can be found in Asian grocery stores)

Directions

Combine the sherry, sugar and shrimp in a medium bowl; set aside. Combine the cornstarch, broth, sauce and sesame oil in a small bowl or a cup measure and set aside.

Heat a wok over medium-high heat. Add peanut oil, ginger and garlic. Stir-fry for 1 minute or until fragrant.

Add shrimp mixture and peas and stir-fry until shrimp are starting to turn pink. Add the broth mixture and stir-fry until the shrimp are just cooked.

Add the garlic chives and stir-fry until combined. Serve immediately.

Serves 4.
