Shrimp Cocktail

  • 1 12 lb (750g) large raw shrimp, with shells
  • salt
  • 6 butter lettuce leaves
  • Chili Lime Sauce

  • 14 cup sour cream
  • 2 teaspoons hot sauce with chipotle chili
  • 2 tablespoons lime juice
  • 1 tablespoon Thais sweet chili sauce
  • 1 garlic clove, minced
  • salt and freshly ground pepper
  • 1 medium, ripe avocado, chopped
  • 14 cup finely chopped red onion


Take a step back in time with a revamped version of an old favorite. A simple and delicious way to start a meal.

Cook shrimp in simmering salted water for 2 to 3 minutes or until they are pink and just cooked; do not over cook. Place in bowl of iced water to stop cooking. Let stand for 5 minutes; drain. Peel shrimp leaving tails intact. Pat dry on paper towel.

Place a lettuce leaf into 6 cocktail glasses or small bowls. Add Chili Lime Sauce, avocado and onion.
