Smoked Salmon and Asparagus Pasta Salad

  • 300g bow tie pasta
  • 1/2 cup thinly sliced red onion
  • 2 tablespoons lemon juice
  • 1 lb (500g) asparagus, trimmed and cut into lengths
  • 375g smoked salmon, torn
  • 2 tablespoons capers, coarsely chopped
  • 2 tablespoons coarsely chopped fresh dill
  • Horseradish Dressing

  • 1/3 cup sour cream
  • 2 tablespoons white wine vinegar
  • 1 garlic clove, minced
  • 1 1/2 tablespoons creamed horseradish


Cook pasta in large pot of boiling salted water for about 12 minutes or until al dente. Drain and refresh under cold water.

Combine onion and lemon juice in small bowl. Let stand for 10 minutes.

Blanch asparagus in same pasta water for 2 minutes or until bright green. Place in bowl of iced water until cool; drain.

Toss cooled pasta with salmon, capers, dill, asparagus and onion mixture together. Add dressing and toss to combine.

To make the horseradish dressing, whisk all ingredients together in small bowl.

Serves 4.
