Stir-Fried Beef with Thai Basil

  • 1 tablespoon peanut oil
  • 1 1/2 lb (750g) beef sirloin, thinly sliced
  • 2 teaspoons sesame oil
  • 2 garlic cloves, minced
  • 1 inch (2.5cm) piece of galangal, thinly sliced
  • 2 or 3 small red chilies, thinly sliced
  • 1 large red pepper, thinly sliced
  • (6 oz) 150g button mushrooms, quartered
  • 1 bunch green onions, trimmed and cut into 3/4 inch (2cm) pieces
  • 1/3 cup fresh Thai basil leaves, packed
  • 2 tablespoons fish sauce
  • 1/4 cup grated palm sugar (or packed brown sugar)
  • 1 tablespoon soy sauce


Heat a large wok or frying pan over high heat. Add the peanut oil and beef in batches and stir-fry for about 3 minutes or until browned. Remove beef from wok.

Add the sesame oil, garlic, galangal, chilies, peppers and mushrooms and stir-fry for about 2 minutes or until peppers are crisp.

Add beef and remaining ingredients and stir-fry until hot and sugar is dissolved.

Serves 6.
