Sweet Chili Chicken Skewers with Cucumber Salad

Ingredients

  • Cucumber Sauce

  • 1/2 cup rice vinegar
  • 1/2 cup water
  • 1/2 cup granulated sugar
  • 1 1/2 cups finely chopped seeded cucumber
  • 1/3 cup finely chopped toasted peanuts
  • 2 tablespoons fish sauce
  • 2 small red chilies, finely sliced
  • Chili Chicken Skewers

  • 1/4 cup chopped fresh cilantro
  • 3 small red chilies, finely chopped
  • 3 tablespoons granulated sugar
  • 3 tablespoons peanut butter
  • 2 tablespoons fish sauce
  • 2 teaspoons lime zest
  • 1/4 cup lime juice
  • 1 teaspoon ground cumin
  • 4 garlic cloves, minced
  • 1 1/2 lbs (750g) boneless, skinless chicken thighs or breasts, sliced
  • 12 wooden skewers that have been soaked in water for 10 minutes

Directions

To make the cucumber salad, combine the vinegar, water and sugar in a small saucepan. Stir over medium heat until the sugar is dissolved. Simmer for 2 minutes to thicken slightly; let cool completely. Add the remaining ingredients and stir until combined.

To make the sweet chili chicken skewers, combine all ingredients in a medium glass bowl. Cover and chill for 30 minutes. Preheat a barbecue or grill pan to medium. Thread chicken onto skewers. Cook on preheated grill for 10 to 12 minutes, turning occasionally, until cooked. Serve with cucumber sauce.
