The Best Beef and Bean Nachos

Ingredients

  • 1 tablespoon canola oil
  • 1 cup chopped onion
  • 1 medium red pepper, diced
  • 4 garlic cloves, minced
  • 3/4 lb (375g) lean ground beef
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 2 jalapeno peppers, chopped
  • 24 oz (796ml) can diced tomatoes, un-drained
  • 2 tablespoons tomato paste
  • 2 cups cooked pinto beans (or 540 ml can, rinsed and drained)
  • tortilla chips
  • 2 cups grated white cheddar cheese
  • 1 cup shredded lettuce
  • 3 medium vine-ripened tomatoes, chopped
  • 1 large ripe avocado, diced
  • 1/3 cup sour cream
  • 1 tablespoon chopped cilantro, optional
  • lime wedges for garnish


Directions

Heat oil in large frying pan over medium-high heat. Add onion, red pepper and garlic and cook, stirring occasionally, for about 5 minutes or until onion softened.

Add chili powder, cumin and chili peppers stir for 1 or 2 minutes until fragrant.

Add beef and cook, stirring, for about 10 minutes or until browned. Stir in tomatoes and their juice, paste and beans. Cook for about 10 minutes or until thickened.

Arrange tortilla chips on a heat-resistant platter. Top with beef mixture. Sprinkle with cheese. Place under preheated broiler for about 3 minutes or until cheese is melted. Top with remaining ingredients in order of their listing.

Serves 6.
