Tomato and Fresh Mozzarella Salad

  • 2 lbs (1kg) vine-ripened tomatoes, sliced
  • 2 garlic cloves, minced
  • 2 tablespoons shredded fresh basil
  • salt and freshly ground black pepper
  • 1 large ball of fresh mozzarella, drained
  • 2 cups arugula
  • 1/3 cup shaved fresh parmesan cheese
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon lemon juice


This is best made just before serving.

Arrange tomato slices on a platter. Sprinkle with garlic, basil, salt and pepper. Tear mozzarella and place over tomatoes. Add arugula and Parmesan. Drizzle with oil, vinegar and lemon juice. Sprinkle with a little more salt and pepper if desired.
