Curry Bean Wraps

  • 1/4 cup mayonnaise
  • 1 teaspoon curry powder
  • 4 small whole-wheat tortillas
  • 2 tablespoons mango chutney
  • 11 tablespoon lime juice
  • medium ripe avocado, sliced
  • 19 oz (541ml) can black beans, rinsed and drained
  • 1 cup finely shredded red cabbage
  • 1/3 cup thinly sliced celery
  • 1/4 cup thinly sliced green onions
  • 1/4 cup sliced almonds, toasted
  • 2 tablespoons chopped fresh cilantro
  • salt and freshly ground black pepper


Combine mayonnaise and curry powder in a small bowl. Spread over one half of tortillas. Spread the other halves with chutney.

Drizzle lime juice over avocado and lay down centre of each tortilla.

Lay the remaining ingredients down the centre of tortillas. Sprinkle with salt and pepper; roll up firmly to enclose filling. Makes 4.
