One Pan Roasted Chicken, Potato and Mushrooms

  • 12 baby potatoes, halved
  • 2 teaspoons olive oil
  • pinch of salt and freshly ground pepper
  • 2 rosemary sprigs
  • 8 skinless, boneless chicken thighs halved
  • 8 garlic cloves, bruised
  • 1 lemon, cut into wedges
  • 8 oz (250g) cremini mushrooms, halved
  • 2 tablespoons balsamic vinegar
  • 4 oz (250g)broccolini (or broccoli), trimmed
  • 1/4 cup torn basil leaves
  • extra olive oil for drizzling
  • parmesan cheese shavings


Grease a roasting pan. Preheat oven to 400°F (200°C),

Toss potatoes, oil, salt, pepper, rosemary chicken, garlic and lemon in prepared roasting pan. Roast for about 30 minutes stirring occasionally until potatoes are browning and chicken is tender.

Add mushrooms, balsamic and broccolini and roast for 10 to 15 minutes or until broccolini is tender and crisp. Stir in basil.

Drizzle individual servings with oil and sprinkle with cheese. Serves 4.
