Tuna Bean Salad with Olive Dressing

Ingredients

  • 1 or 2 cans tuna, drained, flaked with a fork
  • 19 oz (540ml) can white beans, rinsed and drained
  • 1 roasted pepper, thinly sliced
  • 2/3 cup coarsely chopped parsley
  • 1/2 cup diced red onion
  • 2 tablespoons capers, drained and chopped
  • Olive Dressing

  • 1/4 cup olives of your choice, pits removed
  • 1/4 cup olive oil
  • 2 tablespoon red wine vinegar
  • 1 garlic clove, peeled


Directions

To make the olive dressing, place all ingredients in a blender and blend until almost smooth.

Toss all ingredients together. Add dressing and toss to combine.

Serves 2 to 4.
