Brown Butter Mashed Potatoes

  • 3 lbs (1.5kg) potatoes, peeled, quartered (about 6 large potatoes)
  • generous pinch of salt
  • 1/2 cup butter
  • 1/2 teaspoon finely ground white pepper
  • 1/3 cup warm whipping cream


Place potatoes in large saucepan. Cover with water; add salt. Cook over medium-high heat for about 25 minutes or until potatoes are tender. Drain well. Return to pan. Mash with a potato masher to remove any large lumps.

Heat butter in small saucepan over medium heat until butter is golden brown. Add to potatoes with remaining ingredients. Stir with a fork until all lumps are removed. Serves 8.
