Warm Pea Salad with Hazelnut Butter

  • 2 tablespoons butter
  • 1/3 cup hazelnuts, toasted, peeled and coarsely chopped
  • pinch of salt and freshly ground pepper
  • 1 lb (500g) sugar snap peas, trimmed
  • 1 lb (500g) snow peas, trimmed
  • 2 1/2 cups fresh or frozen peas


Melt butter in pan over medium heat. Add hazelnuts. Cook, stirring occasionally until butter is golden brown.

Meanwhile, bring a large saucepan of salted water to boil. Cook sugar and snow peas for about 3 minutes. Add frozen peas and cook for 3 to 5 minutes until hot and peas are tender; drain well. Return to saucepan. Add butter mixture. Stir to coat. Serves 8.
