Chicken Nuggets

  • 1 lb (500g) skinless, boneless chicken breasts
  • 1/2 cup all-purpose flour
  • 2 eggs
  • 1 tablespoon Dijon mustard
  • pinch of salt and freshly ground pepper
  • 2 cups panko breadcrumbs
  • 1/2 cup finely grated fresh parmesan cheese

  • 2 tablespoons honey
  • 2 tablespoons Dijon mustard
  • 1 teaspoon soy sauce


Line baking sheet with parchment paper. Grease a wire rack and place on baking sheet. Preheat oven to 400°F (200°C).

Cut chicken into 1 inch (2.5cm) cubes. Toss in flour.

Whisk eggs, mustard, salt and pepper in shallow bowl until well combined. Coat each chicken piece in egg mixture.

Combine breadcrumbs and cheese in shallow dish. Coat chicken in crumb mixture. Place on prepared wire rack. Bake in preheated oven for about 20 minutes, turning once during cooking, until chicken in golden and cooked. Serves 4.
