Warm Tomato and Bean Salad

  • 1 1/2 tablespoons olive oil
  • 3 cups cherry (or grape) tomatoes, halved if large
  • 4 garlic cloves, thinly sliced
  • 1 teaspoon sambal oelek (chili paste)
  • 2 teaspoons balsamic vinegar
  • 1 tablespoon red pepper jelly
  • 19 oz (540ml ) can great northern beans or navy beans rinsed and drained 2 tablespoons lemon juice
  • 2 tablespoons thinly sliced fresh basil
  • salt and freshly ground pepper


Heat oil in a large frying pan over high heat. Add tomatoes and garlic and cook, stirring occasionally, for about 5 minutes or until tomatoes are wilted and hot.

Add remaining ingredients and gently stir until combined and warm. Serve warm.

Serves 4 to 6.
