Pork, Lentil and Cucumber Wraps

Ingredients

  • 1 1/4 lbs (625g) pork fillet
  • 1 tablespoon olive oil
  • 2 teaspoons ground cumin
  • 1 tablespoon packed brown sugar
  • 2 teaspoons crushed dried chilies
  • 2 teaspoons finely grated lemon zest
  • 4 garlic cloves, minced
  • 1/2 cup plain yogurt
  • pinch of salt and freshly ground black pepper
  • 6 small pita bread, warmed
  • 1/4 cup red chili spread (jelly)

  • LENTIL AND CUCUMBER SALAD
  • 1/2 cup plain yogurt
  • 3 tablespoons lemon juice
  • 19 oz (541ml) can lentils, rinsed and drained
  • 1/2 English cucumber, halved lengthways and thinly sliced
  • 4 green onions, thinly sliced
  • 2 tablespoons chopped fresh cilantro (or mint)
  • 2 garlic cloves, minced
  • pinch of salt and freshly ground black pepper


Directions

To make the lentil and cucumber salad, combine all ingredients in a medium bowl.

Cut pork crossways into thin slices. Place in glass bowl. Add oil, cumin, sugar, chilies, zest, garlic, yogurt and a generous pinch of salt and pepper. Cover and chill for 3 hours or overnight. Heat grill pan or barbecue to medium-high. Cook pork for 2 to 3 minutes each side or until tender.

Spread pita breads with red pepper spread. Spoon salad and pork into pitas. Makes 6.
